Lazy Man's Breakfast Recipe



1 lb breakfast sausage
4 - 5 medium potatoes, peeled and cubed
6 - 8 eggs, beaten
6 - 8 slices of cheese, or you can use shredded
Cooking oil for frying potatoes
Salt and pepper to taste
(Optional)
1/4  c. Chopped bell pepper
1/4 c. Chopped onion

Brown sausage crumbled and drain on paper towels.  If using the peppers and onion, cook them with the sausage.  Fry potatoes in oil until golden and crispy, then drain on paper towels. Combine cooked sausage and potatoes in an electric skillet or large non-stick skillet.  Pour beaten eggs over mixture and stir until eggs are done.  Tear sliced cheese in pieces and add to cooked mixture.  Add salt and pepper to taste.

Homemade Potato Cakes Recipe


Homemade Potato Cakes using your leftover mashed potatoes


Whenever I cook too many mashed potatoes and have leftovers, I sometimes make potato cakes from them.  Here's the recipe/directions for them.  Please remember, these amounts are an "about" amount, and they really depend on how much potatoes you have

2 cups cold mashed potatoes
small chopped onion
2 T. flour, plain or self rising, I use whatever is in my pantry at the time
2 - 3 T cornmeal
salt and pepper
egg (optional)  some people use the egg to hold everything together, but I don't.

Using either a spoon or your hands, mix all the ingredients together.  Once everything is mixed, run your hands under cold water.  Scoop up a small mound of the mixture and flatten it out with your wet hands.  After you've patted out all the potato cakes, fry in cast iron skillet in bacon grease until golden brown.  Drain on paper towels and enjoy while hot and crispy!
